Mexican Hot Chocolate

It’s my favorite time of year; the time I get to cuddle up at the fireplace with my cute little family and sip on a mug full of my favorite hot chocolate. This is why I have spent lots of time in search of the perfect recipe. 

Now, I won’t just drink any cup of hot chocolate - it’s got to be worth it! You see, I have four sleeping disorders. Yep, four. It sucks! One of them happens to be Restless Leg Syndrome (RLS), and over the years I have discovered that caffeine and sugar trigger my RLS. If I drink hot chocolate or sweets at night it means I won’t be sleeping. 

Nevertheless, I have finally created the BEST hot chocolate recipe that makes my sleepless nights worth it. It’s a thick, rich, creamy and easy-to-make recipe.

For our Friendsgiving party, we knew we wanted to serve a warm drink with our dessert since it was a cool Fall night. I immediately knew Mexican hot chocolate would be the perfect fit to our menu. After spending some time reading through Mexican hot chocolate recipes, I couldn't find one with a creamy hot chocolate base like I was use to. I decided to create my own.

Mexican Hot Chocolate

  • 6c whole milk

  • 2c heavy whipping cream

  • 1 can sweetened condensed milk

  • 1 bag semi sweet chocolate chips

  • 1/4c cocoa powder

  • 1-2T cinnamon

  • 1-2T cayenne pepper

Mix all ingredients into a crockpot. Set on low for a few hours, and stir every half an hour or so. At the end of your cooking time, add more cinnamon or cayenne pepper to taste. If the hot chocolate stays in the crockpot too long, it will become very thick. You can simply add whole milk to thin it out and make it less rich. The hot cocoa should have an initial rich, chocolatey, velvet-like mouthfeel and end with a slight hint on heat and spices.
