Pumpkin Chocolate Chip Cookies

You guys, I am a cookie snob. If I eat a cookie, it must be warm and fresh out of the oven. My favorite cookie recipe is a Pumpkin Chocolate Chip Cookie with Maple Frosting recipe from my friend, Caisa. We have a bit of a rule for these delicious cookies - they can only be eaten between the months of September and December. This means you'd better hurry up and try them now, because there's only a month left of this special cookie window!  ;)

Pumpkin Cookies

1 C Crisco

1 C sugar

1 C pumpkin

1 egg

1 t vanilla

2 C flour

1 t baking powder

1 t baking soda

1 t cinnamon

1/2 t salt

1 bag of chocolate chips

Blend the first five ingredients together. Add remaining ingredients and mix completely. Fold in bag of chocolate chips and bake at 375 for 10-12 minutes.

Maple Frosting

3 T butter

1/2 C brown sugar

3 T milk

Powdered sugar

Boil the first three ingredients for 2 minutes. Add powdered sugar to consistency (soft ball stage). Quickly frost cookies before the frosting sets.
